Why are acacia trees yellow? Is it some sort of adaptation?
Plants that have a large proportion of pollination done by bees offer blossoms that are mostly yellow, white or blue with UV nectar guides to indicate to the bee where to seek the nectar (and pollen).

In numerous ecologies as in South Africa “wasps, flies and solitary bees were the most numerous visitors and are likely to play a significant role in pollination [of Acacias].”
